Broccoli and or cauliflower contribute fiber to a quick brunch or supper.
2 cups vegetables of your choice (broccoli, cauliflower, corn) chopped
3 large eggs, beaten
1 cup sharp cheddar cheese (or extra sharp, not mild) grated
Butter a 2 quart baking dish.
Saute or steam vegetables. Beat eggs in medium bowl. Add vegetables. Fold in cheese.
Pour into baking dish. Cover.
Bake 30 to 40 minutes at 325 degrees
