Turnip Green Soup


1 tsp. vegetable oil
1 lb. kielbasa sausage, cut into 1" pieces
1 onion, chopped
5 cups chicken broth
2 (20 ounce) cans turnip greens
2 (14.5 ounce) cans great Northern beans, rinsed and drained
2 cans black eyed peas
Sliced carrots
1-2 cans of fire roasted tomatoes
1 package vegetable soup mix (like Knorr's)
1 tsp. hot pepper sauce (like Tabasco)
1 tsp. garlic powder
1 pinch Creole seasoning (like Tony Chachere's)
Salt and ground black pepper to taste

Heat oil over medium heat in soup pot.  Cook and stir kielbasa and onion in hot oil until onion is tender.  Add remaining ingredients, bring to a boil.  Reduce heat to medium-low and simmer for 2 hours.
