Sweet n' Sour Chicken Wings

This is a hit for any sports event party.

Sweet n' Sour Chicken Wings


3 pounds chicken wings
2 to 4 eggs, beaten
1 cup cornstarch
Vegetable oil -enough for deep frying
1-1/2 teaspoons salt
2 tablespoons lemon juice
1/2 cup currant (red) jelly
1/2 cup sugar
1/2 teaspoon salt
1/4 cup soy sauce
3 tablespoons ketchup
1/2 cup vinegar

Cut tips from wings.  Tips are not used in this recipe.  Cut remaining wing at the joint to make two pieces.  Wash with water and
dry on paper towel then sprinkle with salt.  Heat oil for deep frying to 375 degrees. 

Roll wing sections in cornstarch then dip singly into egg batter to coat evenly. Deep fry several at a time until lightly golden
brown on both side's (about 5 minutes). Drain on a paper towel.  Place in a shallow baking pan.

Combine remaining ingredients in saucepan.  Heat to boiling, stirring constantly.  Lower heat and simmer 10 minutes.  Pour
glaze over chicken pieces evenly.  Bake at 350 degrees for 30 minutes.  Serves 6-10.
