If you like meatball subs, you will like this recipe.
Simple Meatball Stroganoff
Ingredients:
1/3 c chopped green onions
1/4 c seasoned bread crumbs
3 T grated Parmesan cheese
1 pound ground beef
1 loaf (1 pd) Italian bread, cut into 1-inch pieces (*Note:
I find that if you spread the cream cheese, mayonnaise, Italian seasoning
over the bread before cutting, it is lots easier.)
1 (8 oz) cream cheese, softened
1/2 c mayonnaise
1 tsp Italian seasoning
Pepper to taste
2 c (8 oz) shredded part-skim mozzarella cheese
3-1/2 c spaghetti sauce
2 garlic cloves, minced
Directions:
In a large bowl, combine onions, bread crumbs and Parmesan cheese. Crumble beef over mixture and mix well. Shape into 1 inch balls; place on a greased cookie sheet. Bake at 400 degrees for 15-20 minutes.
Meanwhile, arrange bread in a simple layer in an ungreased 13x9 inch baking dish. (You might not use all the bread.)
*Combine cream cheese, mayonnaise, Italian seasoning and pepper; spread over the bread. Sprinkle with 1/2 c mozzarella.
Combine the spaghetti sauce, and garlic; add meatballs. Pour over cheese mixture; sprinkle with remaining mozzarella. Bake uncovered at 350 degrees for 30 minutes. Serves 6.
