Chicken and Sausage Taco

Serve with rice and beans, and it's dinner!

Chicken and Sausage Tacos
Serves 4
Total Time:  45 minutes

1 tablespoon olive oil
8 oz sausage of your choice, cooked and cut into ¼ inch slices
2 cups shredded, roasted chicken
8 6-8 inch corn tortillas, skillet warmed
1 ½ cups shredded cheddar cheese
½ cup sweet onions, chopped
½ cup green pepper, sliced thin
Green chile relish
Taco sauce, optional
In a large skillet, heat oil over medium heat.  Saute onions and peppers until tender.  Remove from skillet, sauté sausage and chicken until heated through.
To make tacos, divide the veggie/meat mixture evenly among the tortillas.  Top with cheese and green chile relish, add taco sauce if desired.  Fold in half.
Note:  The onions and peppers can be left uncooked, if desired.
