Strawberry Chicken Salad

Great in the summer.

Strawberry Chicken Salad


4 boneless chicken breast halves (about 1 lb.)
Cooking spray
Balsamic vinegar
Preheat oven to 350 degrees.  Spray a 9 x 13 " glass baking dish with cooking spray.

Put chicken in dish.  Pour balsamic vinegar over chicken (just enough to coat chicken on both sides)
Sprinkle generous amount of basil over chicken.  Cook 20 minutes or until chicken is no longer pink.
Remove from dish and put into fridge to cool.

1/3 cup olive oil
1/3 cup balsamic vinegar
1 tablespoon honey
1/2 teaspoon basil

Combine olive oil, balsamic vinegar, honey and basil.  Beat with wire whisk or spoon.  Makes about 1/2 cup dressing.

6 cups bite-size pieces Boston lettuce
3/4 cup sliced sliced celery (bite-size)
1/2 cup shelled walnuts, chopped
2 cups fresh strawberries, cut in half.
Cut chicken diagonally into 1/4" slices.  Top lettuce with celery, walnuts, strawberries and chicken.
Drizzle with dressing.  Makes 4 servings.
