Tamale Pie
Ingredients:
1 can vegetarian refried beans
1/2 cup green pepper, chopped
1 cup chopped onion
2 tablespoons oil
8 ounces tomato sauce
2 tablespoons tomato paste
10 ounces frozen corn
1 cup Spanish olives
1 tablespoon cumin
2 teaspoons cocoa
1/2 tsp. allspice
2 teaspoons chili powder
1 tablespoon Worcestershire sauce
1 tsp. Tabasco sauce
Directions:
Warm refried beans and spread as first layer in casserole dish. Saute' onion and green pepper in oil. Add next 10 ingredients and simmer 20 minutes; spread as second layer over beans: 1/4 cup oil. 1 cup soy milk plus 1 tablespoon vinegar, 1/4 cup maple syrup, 1-1/2 cups cornmeal, 1/2 cup flour, 2 tsp. baking powder, 1/2 teaspoon soda, 1 teaspoon salt. Mix the listed ingredients to make a batter.Use as top layer in casserole. Bake 20 to 25 minutes in 400 degree oven.
