Lo-Cal Taco Salad

Using lean beef or turkey makes this normally high calorie treat diet friendly.
Taco Salad
Serves 4
Ingredients:
1 lb. lean ground beef or turkey
1 medium onion (1/2 c), chopped
1 large green pepper, seeded and chopped
1 Tbsp. water
1 Tbsp. vinegar
1 tsp. dry mustard
1/2 tsp. crushed red pepper
1/2 tsp. dried basil, crushed
4 tortillas, 6-8 inch
Non-stick spray coating
Topping:
4 c lettuce, shredded.
12 cherry tomatoes, halved
1/4 c grated Parmesan cheese
Directions:
In skillet brown beef with onion and 1/4 c. green pepper on medium high
Add remaining ingredients and bring to boil.
Reduce heat and simmer 15 minutes
Soften tortillas wrapped in foil in oven at 350 degrees for 10 minutes
Spray 4 10 oz casseroles with Pam. Press 1 tortilla in each bowl.
Bake 15 minutes at 350 degrees or until crisp.
Place lettuce in each Tortilla bowl. Spoon in beef mixture and top with remaining green pepper, tomato and cheese.
