Cheesy Vegetable Lasagna

A delicious vegetarian dish that even carnivores will love!

Cheesy Vegetable Lasagna


12 lasagna noodles
2 tbsp olive oil
2 heads chopped broccoli
2 thinly sliced carrots
2 small sliced zucchini
1/2 cup flour
3 cups milk
3/4 cup Parmesan cheese
1/2 tsp salt
1 (10 oz) package frozen spinach
1 (8 oz) small curd cottage cheese
24 oz Ricotta cheese
2 1/2 cups shredded mozzarella cheese

Preheat oven to 3745 degrees F. Grease 9 x 13 inch casserole dish. Bring large pot of water to a boil, cook noodles for 8-10 minutes. Saute vegetables in oil for 7 minutes over medium heat. Place flour in saucepan, whisk in milk until well blended. Bring to a boil over medium heat, cook 5 minutes (until thick), stirring. Stir in 1/2 cup Parmesan cheese, cook for 1 min, stirring continuously. Remove from heat. Stir in spinach (but reserve 1/2 cup). Spread 1/2 cup spinach mix in pan. Layer noodles, then cheese mix, then veggies, then spinach, then mozzarella cheese, ending with noodles. Top with reserved spinach and remaining cheese. Bake for 35 minutes.
