Can be made with or without meat. The basic recipe is great on it's own, but you can add shredded cooked chicken, cooked shrimp, or sliced chorizo or smoked sausage.
4 tbsp olive oil
1/4 + 1/8 tsp seasoned salt
1 head cauliflower, trimmed into florets
1 green pepper, diced
1 medium onion, chopped
10 oz yellow rice mix
3 plum tomatoes, diced
1 c frozen peas, thawed
Heat oil in large lidded skillet over medium heat. Add cauliflower, pepper, onion. Saute about 5 min. Sprinkle with seasoning salt. Stir in rice mix, tomatoes and 2-1/4 cup water. Bring to a simmer. Cover and reduce heat to medium-low. Cook for 18-20 minutes. Uncover and stir in peas. If you are adding meat, cook separately and stir in at the end with peas.
