That's right. A cheesecake with no cheese.


Cheeseless Cheese Cake

Ingredients:

4 eggs, separated
1-1/3 c sweetened condensed milk
1/3 c lemon juice
1 tsp grated lemon rind
1 tsp vanilla extract
1/2 tsp nutmeg
2/3 c zwieback crumbs (12)
2 T melted butter

Directions:
Beat egg yolks.  Add condensed milk and mix.  Add lemon juice, rind, vanilla and nutmeg.  blend well.  Beat egg whites until stiff, but not dry.  Fold into milk mixture.  Combine zwieback crumbs and butter.  Sprinkle buttered pan (8x8 inch) with half the crumbs. Pour in mixture and sprinkle with remaining crumbs. Bake in slow oven 325 degrees for 30 minutes.  Cool 1 hour in oven with door closed.
