Porcupine Meat Balls

No need to heat up the kitchen since this recipe uses a pressure cooker.

Porcupine Meat Balls


1 lb ground beef
1/2 c uncooked rice
1 tsp salt
pepper to taste
2/3 c tomato puree
2 T shortening
1 med. onion, cut in rings
1 c tomato sauce
1 c celery, diced
1 green pepper, diced
1/2 tsp dry mustard
1 T sugar
1/4 c hot water

Combine the first 5 ingredients.  Mix well.  Form into 8 balls.  Heat pressure cooker, melt shortening and slightly brown balls.  Add onion, tomato sauce, celery and green pepper.  Combine mustard and sugar in hot water.  Pour over meat balls.  Close cover.  Cook for 8 minutes with pressure regulator slowly rocking.  Remove meat balls immediately.
