Impossible Salmon Pie

Not many ingredients, but a winner.

Pecan Salmon Bake


2 t Dijon mustard
2 T butter, melted
1 T honey
1/4 c bread crumbs
1/4 c finely chopped pecans
2 tsp parsley
4 (6 oz) salmon fillets

Heat oven to 400 degrees.
Blend mustard, butter and honey in a small bowl and set aside.  Mix bread crumbs, pecans and parsley in another small bowl and set aside.  Season salmon to taste with salt and pepper.  Place on a non-stick sprayed baking dish.  Brush salmon with mustard-honey mix.  Pat bread crumbs onto top surface of salmon pieces.  Bake for 10 minutes per inch of thickness until salmon flakes easily with a fork.
