Alison's Ice Box Cake
Ingredients:
6 dozen chocolate cookies (thin wafers from Publix)
1/2 pound of REAL butter
2 cups confectioners sugar
4 eggs
2 teaspoons of vanilla
2 cups chopped pecans
1 pint of whipping cream
Directions:
Grind cookies and put 1/2 the crumbs into the bottom of a pan or dish. Beat the butter and gradually add the confectioners' sugar. Beat until light. Add the eggs, one at a time, add vanilla. Spread the mixture on top of crumbs. Sprinkle the chopped pecans over the mixture, then spread the cream (whipped). Sprinkle remaining cookie crumbs over all. Chill overnight.
