Grilled Fajita Steak and Shrimp Tacos


These tacos will serve nicely as the main event at a Mexican food themed gathering.


Grilled Fajita Steak and Shrimp Tacos
Serves 4
Total Time: 45 minutes

Ingredients:
1 lb beef flank steak
3 tablespoons olive oil
Kosher salt
12-16 medium shrimp, peeled and deveined
1 large sweet onion sliced in rings
2 large bell peppers, julienned
Note:  A mixture of green, red, yellow and orange peppers make this a very attractive dish.
Salt
Black pepper, freshly ground is best
8 flour or corn tortillas, 6-8 inches
2 limes, cut into 6 wedges
Optional – taco sauce or salsa
 
Directions:
This can be prepared on a preheated, greased barbecue grill, a cast iron skillet or a broiler pan.
Brush meat and shrimp with 2 tablespoons of oil.  Season the steak with salt to taste.  Grill the steak for 3-4 minutes per side, depending on thickness until medium rare with a well browned surface.  Let the steak stand for 5 minutes, then thinly slice across the grain.  Meanwhile, grill the shrimp.
In a large skillet heat remaining oil and sauté the onions and peppers, add salt and pepper to taste.  The veggies should be slightly charred.
To build tacos, warm tortillas, divide meat, shrimp and vegetable mixtures equally among tortillas and fold in half.  Serve with lime wedges.
