If you can find frozen sliced yellow squash, could use as a substitute for the fresh in season vegetable.
1-8 oz. box stove top stuffing mix
1 stick butter or margarine
3 cups cooked squash (diced)
1 can cream of chicken soup
1 cup sour cream
1 jar drained pimentos
2 medium chopped onions
Preheat oven to 350 degrees. Melt butter or margarine in medium skillet; stir in stuffing. Put half of the mixture in bottom of casserole dish; mix other ingredients and pour on top of stuffing mix. Add the remaining stuffing mix on top. Bake 25-35 minutes as ovens vary.
