Potato Salad

Great for a potluck or a picnic or a cookout!

Potato Salad
Serves 4
Total Time:  45 minutes

3 lbs peeled potatoes                                                   1 cup diced celery
½ cup diced, boiled carrots                                         ¼ cup diced onions
4 hard boiled eggs                                                       1 ½ teaspoon salt
¼ teaspoon black pepper                                             1 tablespoon cayenne pepper (optional)
½ cup dill pickles, chopped                                        1 cup mayonnaise

Combine cut up, cooled potatoes with celery, onions, carrots, 3 boiled eggs, salt, black pepper, cayenne pepper, and dill pickles.  Fold in mayonnaise, small amounts at a time.  Serve topped with sliced hard boiled egg sprinkled with paprika.
