Awesome casserole that is a family favorite! There are many versions of this recipe, but this one is a keeper!
3 chicken breasts (cooked until tender and torn into pieces)
1 head broccoli florets (steamed until tender)
2 cans cream of chicken soup
1 cup freshly grated sharp cheddar
1 cup mayonnaise
1 medium carton sour cream
1 T lemon juice
1 tsp curry powder
Salt and pepper to taste
Mix soup, sour cream, mayo, cheddar cheese, and seasonings. Drain broccoli and arrange in greased casserole pan. Sprinkle with parmesan cheese. Remove chicken from bone and place over broccoli. Sprinkle with more parmesan cheese. Pour soup/cheese mixture over chicken. Sprinkle with parmesan cheese, paprika and dot with a little butter. Cook about 40 minutes in 350 oven.
