1 box (13.25 oz) spaghetti, whole grain 1 tablespoon olive oil
1 yellow onion, chopped 1 red bell pepper, chopped
1 can (28 oz) whole peeled tomatoes 1 bunch of asparagus, chopped
½ cup mushrooms, sliced Salt and pepper to taste
¼ cup grated Parmesan cheese
2 cloves of garlic, minced or 1 teaspoon of garlic powder
Cook pasta according to package directions. In a large skillet cook peppers, onions and garlic in olive oil over medium heat until tender or about 5 minutes. Add tomatoes and simmer for 15 minutes. Add asparagus, mushrooms and salt and pepper to taste. Simmer an additional 10 minutes or until asparagus is tender. Combine pasta and sauce and toss with Parmesan cheese. Serve immediately.
