Swiss Vegetable Medley

Makes a nice winter side dish, but delicious year-round.

Swiss Vegetable Medley


1- 16 oz bag of broccoli, cauliflower, carrots (thaw and drain)
1 can of cream of mushroom soup
1 cup shredded Swiss cheese
1/3 cup sour cream
1/4 tsp pepper
1 1/2 cups Durkee's french fried onions
1 4 oz jar of pimentos (optional)

Save 1/2 cup cheese and 1 cup onions then combine rest of ingredients. Bake covered at 350 degrees, uncover and add remaining cheese and bake for 5 additional minutes.
