Apricot and Ricotta Stuffed Celery

Another nice recipe for a party.

Apricot and Ricotta Stuffed Celery


25 celery pieces, each 2 inches in length
3 T coarsely chopped apricots
1/2 c part-skim ricotta cheese
1-1/2 tsp sugar
1/8 tsp salt

Cut thin slice from bottom of each celery stick so it can lie flat, set aside. (This allows for a nicer presentation). Place apricots in food processor or blender; process until finely chopped.  Reserve 1 T apricots for garnish.  Add ricotta cheese, sugar, salt to food processor; process.  Fill celery sticks with cheese mixture.  Cover and refrigerate 2 hours.  Sprinkle with reserved chopped apricots for garnish before serving.
