Shrimp Chili Quiche

You don't have to buy expensive shrimp as this recipe calls for one can of shrimp.

Shrimp Chili Quiche


1 regular pie crust shell, thawed
2 eggs
1 (5.3 oz) evaporated milk
2 T flour
3/4 tsp garlic salt
1/2 c shredded cheddar
1/2 c shredded Monterey Jack cheese
1/2 c onion, chopped
1 (4 oz) chopped green chilies
1 (4 oz) deveined medium shrimp, drained

Preheat oven and baking sheet to 450 degrees. Partially bake pie shell about 6 minutes on it.
Remove from oven.  Reduce oven temp. to 350 degrees.  Beat together eggs, evaporated milk, flour and garlic salt. Stir in cheeses, onion and green chilies. Pour into pie shell.  Spread shrimp on top of custard mixture.  Bake on preheated baking sheet, about 35 to 40 minutes. Cool 15 minutes. Serves 6.
