Avocado Salad


Avocados have lots of vitamins in them, like Vitamin E, K, C, B6, potassium, etc. But they are higher than other fruit in fat.


Avocado Salad

Ingredients:

1 medium Florida avocado, peeled, seeded and sliced (wait until serving to cut)
1/2 c cucumber peeled, and diced
2 green onions with tops, chopped
1 T parsley
1 c garbanzo bans, drained
1 c taco sauce
2 tsp olive oil
1 tsp cider vinegar
1 tsp lime juice
 Lettuce leaves

Directions:
Combine cucumber, green onions, parsley and garbanzos in a medium bowl. Chill. Just before serving add avocado to cucumber mixture. Combine taco sauce, police oil, vinegar and lime juice in small bowl. Pour over avocado-cucumber mixture.
