Tilapia is relatively inexpensive and readily available, which allows for preparing this dish for a large gathering.
Baked Tilapia with Tomatoes and Olives
Total Time: 30 minutes
6 Tilapia fillets
¼ cup extra virgin olive oil
4 springs of fresh thyme
3 tomatoes, peeled, seeded and chopped
½ cup coarsely chopped green olive
¼ teaspoons dried hot red pepper flakes
2 garlic cloves, minced
½ cup finely chopped red onion
1 tablespoon fresh lime juice
1 tablespoon GoyaR Sofrito tomato cooking base
Salt to taste
Lightly oil a shallow baking dish and place the fillets in a single layer, skin side down. In a bowl stir together the oil, thyme, tomatoes, olives, pepper flakes, garlic, onion, Sofrito and lime juice.
Lightly sprinkle the fillets with salt and spoon the tomato mixture over them. Bake uncovered in a 400 oven 15-20 minutes or until it just flakes.
