One Pot Primavera Pasta


A real crowd pleaser.


One Pot Primavera Pasta
Serves 4
Total Time:  45 minutes

Ingredients:

1 medium onion, chopped
4 cloves garlic, sliced
1 medium potato, cubed
1 medium zucchini, sliced in half moons
1 medium yellow summer squash, cut into ¼ inch pieces
1 cup green peas
6 tablespoons extra virgin olive oil
4 plum tomatoes, peeled, cored and coarsely chopped
Salt and cayenne pepper to taste 
1 lb spaghetti or penne pasta
¼ cup freshly grated Romano cheese
2 cups chicken stock
Handful of fresh basil, shredded

Directions: 
Heat olive oil in a 4 qt pan over medium heat. Saute onions for 3 minutes. Add potatoes and cook until almost done, add garlic and all other vegetables.  Season with salt and cayenne pepper. Add chicken stock and simmer until it starts to thicken. Drop pasta into pan and cook on medium heat. Add water or more stock until pasta is covered. Cook for 8 minutes or until pasta is done. Stir in Romano cheese and fresh basil and serve.
