Betty's Homemade Salad Dressing


This dressing can be made in any amount and will keep well in the refrigerator. Just use equal parts vinegar and oil. (Fewer calories than traditional vinaigrette dressing recipes.)


Betty's Homemade Salad Dressing

Method:

Start with 1 cup good quality oil (olive or canola)  and 1 cup of vinegar (cider, balsamic, wine, or rice)
Put oil and vinegar in blender and add the following:
1 garlic clove
1 teaspoon of Dijon mustard and whatever other flavorings you like.(salt,pepper, fresh herbs like basil.
Consider adding fresh scallions, capers, fennel seed, crushed red pepper, etc. Blend after each addition.
Keep tasting until it is to your taste. If it is too tart, add a teaspoon of honey,
Experiment, it will be different each time you make it.

Put 1/4- 1/2 cup in the bottom of your salad bowl. Then put your chilled greens in and other fresh vegetables on top. Toss right before serving and sprinkle with some freshly grated Parmesan or Romano cheese.
