Pecan Baked Catfish

We feel baked is healthier than frying.


Pecan Baked Catfish

4 farm raised catfish fillets (not frozen)
1/4 c Dijon-style mustard
1 T melted butter
1/2 c dry bread crumbs
1/2 c ground pecans
Non-stick spray oil

Preheat oven 375 degrees. Rinse fillets, pat dry, place round side up on greased baking sheet. Brush each with 1 T Dijon mustard. Combine butter, bread crumbs, and pecans. Spread 1/4 of mixture over each fillet. Press firmly. Spray each fillet with oil. Bake 13-15 minutes if not frozen. Serves 4.
