Can be used for a brunch crowd; you just throw them in the oven in the morning.
Make Ahead Parmesan Potatoes
1 bag frozen hash browns thawed
1 pint half and half
2 tablespoons butter
1 cup Parmesan cheese
Salt and pepper to taste
Combine potatoes, 1/2 of the half and half, butter and salt and pepper in large sauce pan.
Simmer until well mixed and creamy, adding liquid as required.
Place in baking pan, cover with cheese.
Bake at 350 degrees for approximtely 1 hour.
I have made this recipe with milk instead of half and half. Sometimes the potatoes seem dry, if this happens just adjust the amount of liquid.
