This is a great salad to serve anytime of the year, but especially nice in the Fall (Thanksgiving) or Winter (Christmas). It has become a family holiday salad.
2 tablespoons water
1/2 cup balsamic vinegar
1/2 cup corn oil
1 tablespoon Grey Poupon dijon mustard
1-2 cloves garlic, finely minced
2 tablespoons honey
1/2 bag craisins
4 oz. sauteed slivered almonds
1 scallion chopped
1/4 cup chopped red onion
2 peeled and chopped MacIntosh apples, or similar soft apples
Gorgonzola cheese crumbled on top, as desired.
