Almost Instant, Very Easy Fruitcake

This recipe gives all the joy without all the hassle.

Almost Instant, Very Easy Fruitcake
Serves 8-12
Total Time:  2 hours

2 1/2 cups of unsifted flour
1 teaspoon baking soda
2 eggs, slightly beaten
1 28 oz. jar prepared mincemeat (regular or rum)
1 14 oz. can of condensed milk
2 cups (1 lb,) mixed candied fruit
1 cup coarsely chopped nuts

Preheat oven to 300 degrees. Combine flour and baking soda. In a large bowl combine remaining ingredients, blend in dry ingredients. Pour into greased pans. Bake 1 hour and 20 minutes (loaf pans) or until wooden pick inserted near center comes out clean. Cool 15 minutes and remove from pan, if you wish.
Makes 2 9x5 loaves, 12 giant muffins or mini loaves, or 18 cupcakes.
