Aunt Virginia's WV Corn Pone Bread


This pone (bread) recipe is native to Nicholas County, West Virginia. Aunt Virginia makes one for all family reunions. This pone is sweeter than regular corn bread.


Aunt Virginia's WV Corn Pone Bread
THIS RECIPE IS MADE IN STAGES AND REQUIRES  AN OVERNIGHT SET

Ingredients:
2 cups corn meal(must be regular corn meal, NOT SELF RISING MIX  Corn meal may be difficult to find.
2 cups boiling hot water
1/2 cup flour  (plain,not self-rising
1/2 cup sugar
1 tsp. salt
1 tsp. baking powder
1/2 tsp.soda
1 egg, beaten
1/2 cup buttermilk
1/8 cup oil
+Preheat oven to 425 degrees which will be lowered for last 23 minutes

Directions:
Step 1: Mix meal and hot water. Let it stand overnight. (It can be mixed in the morning for evening baking)
Step 2: Mix dry ingredients together (flour,sugar,salt,baking powder,soda).
Step  3: Add dry ingredients to corn meal. Add egg, buttermilk, and oil to meal mix.
Step 4: Grease a 9 x 5 loaf pan with Crisco shortening.
Step 5: Dump mix in the  pan and place in hot oven (425 for the first 30 minutes.Lower temperature to 375 for the remaining 23 minutes).
Step 6: Let cool for 10-15 minutes .Dump out. Cool. Wrap in foil. Refrigerate left overs.
