Vegetable Quiche

Spinach, garlic and Swiss cheese just seem to go together.

Vegetable Quiche


1 pie shell
1 lb. fresh spinach, cooked and well drained
1/2 cup chopped green onions
 1 clove garlic, minced
2 tsp. butter
1-1/2 cups shredded Swiss cheese
3 eggs, lightly beaten
3/4 cup milk
1-1/2 tsp. salt
1 tsp. basil
1/2 tsp. celery salt
2 medium tomatoes, thinly sliced
1 tablespoon grated Parmesan cheese
Add bacon, ham or shrimp to flavor

Saute onions, garlic in butter, add spinach, stir until excess moisture evaporates. Combine with Swiss cheese, eggs, milk,
salt, basil, celery salt. Pour into pie shell.arrange tomatoe slices around edge, bake 425 degrees for 15 minutes, lower
temperature to 350 and bake 10 additional minutes. Sprinkle combined bread crums, Parmesan cheese over tomatoes, bake 10 more minutes.
Top should be puffy, center moves slightly.
