Avocado-Pecan Bread

The avocado replaces butter and is much healthier for you.

Avocado-Pecan Bread


1 c sugar
2 c flour
1/4 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 egg, slightly beaten
1/2 c buttermilk
2 T orange marmalade
1 c mashed, ripe avocado
1 T vegetable oil
1 tsp lemon juice
3/4 c chopped pecans
1/2 c golden raisins

Preheat oven to 350 degrees.  Sift sugar, flour, salt, baking soda and baking powder into a large mixing bowl.  Add egg, buttermilk, avodado, oil, lemon juice and then beat well with mixer at medium speed.  Fold in pecans and raisins.  Spoon batter into a well greased 9x5 loafpan.  Bake for 40+ minutes.
