Stuffed Baked Potatoes

Great with steak!

Stuffed Baked Potatoes
Serves 6

6 baking potatoes approximately same size
1 9 oz pkg frozen creamed spinach
2 egg yolks
Salt and pepper
Onion powder
4 slices American cheese

Bake potatoes in 425 degree oven until done (approx. 1 hour).
Defrost creamed spinach.
Split potatoes in half lengthwise and carefully scoop out most of the pulp leaving skins intact.
Mash pulp with egg yolks, seasonings, and spinach beating until mixture is very smooth.
Refill shells, mounding filling high. Cut cheese into thin strips and place criss-cross over potatoes.
Slide under broiler to melt cheese or return to oven for 10 minutes.
