Creamed Spinach Crepes


Every Christmas a friend had a party and would serve these. Delicious!


Creamed Spinach Crepes

Ingredients:

6 crepes (see below)
1 (10 oz) pkg frozen chopped spinach, thawed and well drained
1 c milk
3 T butter
1/4 c flour
1/2 tsp garlic powder
1 chicken bouillon cube, crushed, (low sodium)
1/4 tsp pepper
1/2 c shredded Swiss cheese

Directions:
In blender container put spinach and milk. Cover and process until finely chopped. Set aside. In a skillet melt butter on medium heat. Rub in flour and seasonings until a paste is formed. Stir in spinach mixture. Cook and stir till thick. Place 1/4 mixture in center of each crepe. Roll and place in a buttered dish. Bake 375 for 15-20 minutes. Last 5 minutes sprinkle with cheese.

Crepes
2 eggs
3/4 c milk
1 T butter, melted
1/8 tsp salt
1/2 c flour
3/4 tsp sugar (can add 1/2 c Parmesan for variation)
Put all this into a blender. Fry about 1/4 c in a little butter for about 3 minutes, flip and cook other side for about 2 minutes.
