Good way to use up 1 cup of leftover mashed potatoes.
Potato Chocolate Cake
1 cup butter
1-1/2 granulated sugar
2 (1 oz) squares unsweetened choclate, melted
1 tsp vanilla
1 c prepared instant mashed potatoes
2 c flour
1 tsp baking soda
3/4 c buttermilk
Preheat oven to 350 degrees. Grease and flour two 8 inch pans. Sift together the flour, baking soda and set aside. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Stir in the melted chocolate, vanilla and mashed potatoes. Beat in the flour mixture alternately with the buttermilk. Mix just till incorporated.
Pour batter into prepared pans. Bake in oven for 25 minutes.
