Cheesecake with Fresh Fruit

Since we have so many nice fruits in Florida; I like to switch fruits each time I make it.

Cheesecake with Fresh Fruit


4 c Dannon plain low-fat yogurt
1/2 c graham cracker crumbs
1 T butter, melted
1 c low-fat cottage cheese
3 egg whites
3/4 c sugar
2 T flour
1 T lemon juice
1 tsp vanilla
Sliced fresh fruit of your choice on top

Preheat oven 325 degrees. Combine crumbs and melted margarine. Press evenly into a 9 inch springform pan, set aside. In food processor, combine cottage cheese, and egg whites. Add drained yogurt, sugar, flour, lemon juice and vanilla. Blend well. Pour into crust. Bake for 1 hour.
