Hush Puppies

This goes great with fish, baked beans, cole slaw.



1/4 tsp salt
pinch of baking soda
1/2 c buttermilk
1 egg, slightly beaten
1 small onion, finely chopped
1-1/2 tsp vegetable oil

Combine cornmeal, flour, baking powder, sugar and salt in a mixing bowl. Mix well and set aside. In a small bowl, dissolve soda in buttermilk. Add egg, onion and 1-1/2 tsp oil. Stir well. Add to dry ingredients, mixing well. Drop batter by tablespoonfuls into deep, hot oil (350 degrees) cooking ony a few at a time. Fry for 2-3 minutes, turn and fry an additional 2-3 minutes or until hush puppies are golden brown. Drain well on paper towels. Serve immediately. Makes 12.
