Fish Cakes

This is a great way to use leftover fish from a previous meal.

Fish Cakes
1/2 lb fish (whatever type you prefer)
1 large potato (shredded)
3 T onions, diced
2 eggs
water (1 T)
salt and pepper
1 c bread crumbs
parsley (1 T)
Parmesan (2 T)

Mash everything together and fry in 2 T vegetable oil. Makes 5 large cakes like a hamburger. Can be served with or without a hamburger bun with baked beans and cole slaw.
