Chicken Rice Casserole

Chicken Rice Casserole
Ingredients:
2 chicken breasts, cooked and cut iinto bite sized pieces
1 c celery, chopped
1/4 c onion, chopped
1 can cream chicken soup or mushroom soup
1/2 c slivered almonds
1 c cooked rice
1 c frozen peas
2 tsp lemon juice
pepper to taste
1/2 c mayonnaise
1/2 c water or chicken broth (may not need)
2 hard boiled eggs, chopped
1/2 can fried onion rings
Directions:
Mix soup and mayonnaise (add a little water if needed). Add other ingredients and mix together. Put into a greased casserole dish.
Bake in 350 degree oven for 45 minutes with lid on. Try to get casserole to room temp first (leave on counter 20 minutes). Take out of oven, sprinkle 1/2 can of onion rings on top and put back in oven with lid off for 3 minutes.
