Roasted Mustard Potatoes

Potatoes done a bit differently......

Roasted Mustard Potatoes
Serves 4

2 large baking potatoes - washed thoroughly
veg oil cooking spray
4 tbs Dijon mustard
2-4 tsp paprika
1-2 tsp ground cumin
1-2 tsp chili powder
1/4 tsp cayenne pepper

Preheat oven to 400 degrees.  Coat roasting pan lightly with veg oil spray. 
In large bowl whisk mustard, paprika, cumin, chili powder and cayenne pepper. 
Cut each raw potato into 12 - 16 chunks.  Prick each chunk with tines of fork and add them to bowl.  Toss to coat the potatoes evenly.  Pour the coated potatoes into the sprayed roasting pan.  Leave some space between each potato.
Bake for approx. 45 minutes to 1 hour until potatoes are fork tender.  Serve hot.
