Peaches and Cream Cake

A co-worker brought this to a function years ago and everyone loved it. I have made this recipe often ever since.


Peaches and Cream Cake


3/4 c flour
1 tsp baking powder
1/2 tsp salt
1 (3 oz) pkg vanilla pudding (not the instant type)
3 T margarine
1 egg
1/2 c milk
1 (15 oz to 20 oz) can sliced peaches, drained
1 (8 oz) pkg  lite cream cheese, softened
4 T reserved peach juice
1/2 c sugar
1 T sugar and 1/2 tsp cinnamon (topping)

In a large bowl, sift the flour, baking powder and salt together. Add the vanilla pudding, margarine, egg and milk. Beat the mixture for 2 minutes at med. speed. Grease a 9 or 10 inch baking dish or pie pan. Pour the batter into the greased pan...spread evenly. Arrange the drained peach slices over the batter. Then in a small bowl mix the cream cheese, the 3T peach juice and the 1/2c sugar together. Beat this mixture for 2 minutes at med. speed. Spoon the cream mixture over the batter, to within 1 inch of edge of pan. Combine the 1T sugar with the cinnamon and sprinkle over the cheese filling.

Bake at 350 degrees for 35 (?) minutes until golden brown. Refrigerate until serving.
