Cauliflower Casserole

Parsley and Dijon mustard are the flavor notes in this dish.

Cauliflower Casserole


1 bag cut up cauliflower or 1 head cut up
2 tbs plain bread crumbs
2 cups sour cream
1 tbs Dijon mustard
2 tbs cornstarch
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese

Blanch fresh florets in boiling water for 4-6 mins.  Drain.  Mix parsley with bread crumbs and set aside.

Blend sour cream, mozzarella cheese, cheddar, mustard and cornstarch.

Spread mixture over cauliflower - top with bread crumb mixture.

Bake covered at 350 degrees for 50-60 mins

Serves 6
