Date Pie

This pie is rich, so cut the pieces small. But it is delish!

Date Pie
(350 degree oven/25 minutes)


Date Layer:
10 oz whole pitted dates, coarsely chop
2 T unsalted butter
Dash salt
2 T crushed pineapple
2 T heavy cream

Cream Layer:
1 (16 oz) container sour cream
1/2 c white granulated sugar
2 tsp vanilla extract

Date layer preparation:
Saute coarsely chopped dates in butter for several minutes until caramelized, sprinkle with salt. Then put in food processor with pineapple and 2 T half-n-half. Pulse until chunky.

Cream Layer Preparation:
Mix sour cream, vanilla and sugar until well mixed.


Spread date mixture evenly over pie crust.  Spread cream layer evenly over date mixture. Bake. Then cool in refrigerator.
