I have made these for years. Everyone who is a peanut butter fan loves these. Easy to make.
1-1/2 lb. confectioners sugar (I use about 3-1/2 c)
1/2 lb butter
l lb peanut butter (I use almost a small jar of either creamy or crunchy).
Mix all together and form into balls. Freeze on cookie sheet. (Makes easier handling to put chocolate on top.)
1 cup chocolate chips
Put a tsp of butter in with chocolate.
Spear frozen buckeyes with a toothpick in order to make it easier to dip balls in chocolate. Cover only half of ball with chocolate. Then wrap each in a candy wrapper and refreeze to harden chocolate.
