Spinach Cheese Quiche

Can be served as a main dish or a side. Colorful for the Christmas holidays.

Spinach Cheese Quiche


1 9 inch frozen pie crust
1 10 oz. package of frozen chopped spinach
1 cup whipping cream
1/4 teaspoon salt
1/2 teaspoon pepper
3 large eggs lightly beaten
1 1/2 cups (6 ounces) shredded mozzarella cheese
1/2 cup (2 ounces) shredded cheddar cheese
1/2 cup finely chopped onion, sautéed until translucent
1 7 ounce jar roasted red peppers, drained and chopped
1/2 cup (2 ounces) crumbled feta cheese

Bake pie crust according to package directions. Let cool. Cook spinach and squeeze between several layers of paper towels to remove excess moisture. Sautee onion in very small amount of oil until translucent. Drain and chop red peppers. Combine spinach, cream, salt, pepper and eggs; stir well. Sprinkle mozzarella and cheddar cheese and onion into pie shell. Add spinach mixture. Top with red pepper and sprinkle with feta cheese. Bake uncovered at 350 degrees for 60 minutes or until set. Cover loosely with foil and let stand 10 minutes.
