This is delicious and can be made in the crockpot, leaving you freed up for other things.
1 can chicken
1 (6-ounce) package cornbread stuffing mix (only use cornbread)
1 large onion, chopped
1 cup chopped celery
3 eggs, beaten
1 (10-ounce) can reduced-sodium cream of mushroom soup
1-1/2 cups reduced-sodium chicken broth
1 to 2 teaspoons poultry seasoning
2 tablespoons butter, cut in small pieces
Combine chicken, stuffing mix, onion, celery, eggs, soup, broth and seasonings in a bowl; mix gently. Transfer to greased slow cooker. Top with butter.
Cook, covered, *2 hours. Do not remove lid during cooking time. Serves 10. *Check after 2 hours - might need more time depending on crockpot.
