One of our sons especially loves goulash. You can make it ahead of time and microwave it. Leftovers freeze well.
2 c elbow macaroni, cooked
1 pound lean ground beef
1/2 bell pepper, chopped
1 small onion, chopped
1 (28 oz )jar spaghetti sauce (or I have used 28 oz diced tomatoes and 15 oz tomato sauce)
1 tsp garlic powder
pinch black pepper
1 c shredded Cheddar cheese
In a large skillet, brown the meat, bell pepper and onion for 6 or so minutes. Add the cooked macaroni, spaghetti sauce, garlic powder and pepper. Mix. Reduce heat to medium-low and let and simmer for 7 minutes. Sprinkle with cheese, simmer 1 minute until cheese melts.
