A friend's Mom's famous pimento cheese recipe. While it may not be healthy, it is always a hit!
1 8 oz. grated sharp cheddar cheese
1 8 oz. grated monterey jack cheese
Large jar diced pimentos, drained
1/2 cup mayonnaise (usually use Duke's)
1/2 of an 8 oz. block of cream cheese
Salt, pepper, onion powder (to taste)
Teaspoon of chili powder OR Worcestershire OR Tabasco (for kick!)
Blend all together (ideally with amixer, but a food processor can work)...best if it sits overnight.
