Chocolate Chip Cookies

Chocolate Chip Cookies

1/2 c avocado, mashed (or substitute 1/2 c butter)
3/4 c light brown sugar, packed
3 T granulated sugar
1 large egg
2 tsp vanilla extract
1-3/4 c all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 T regular instant coffee (grind with mortar and pestle to powder)
1 c semi-sweet chocolate chips

Preheat oven to 300 degrees. Cream the avocado with the sugars using an electric mixer on low speed until fluffy.

Beat in the egg and the vanilla and powdered instant coffee.

In a mixing bowl, sift the dry ingredients and beat into the avocado mixture at low speed for about 15 seconds. Stir in chocolate chips.

Scoop out batter about the size of a walnut and place on a greased cookie sheet about 3 inches apart. Gently press down into a 2 inch circle. Bake for 21 minutes, approximately. Take them off the hot cookie sheet and put them on a large piece of wax paper to cool. Makes about 20-24 cookies.
